
Easy Breakfast Recipe: Chia Seed Pudding
May 21, 2025As the weather gets warmer, one of my favorite breakfast options is chia seed pudding. Full of protein, fiber, and omegas, this is an easy, filling recipe. Make sure to soak your chia seeds overnight so it fully expands, making it safer to consume and easier to digest.
Ingredients:
- 2 tbsp chia seeds
- ½ cup plant-based milk (I use soy milk for extra protein)
- Plant-based yogurt (optional) - I like the Kite Hill Brand
- Toppings: I like to add fruit, granola, and nuts/seeds
- Drizzle of vegan honey or maple syrup (optional)
Instructions:
Soak chia seeds in plant-based milk and stir well. I recommend using a mason jar or similar container that seals easily. Place in refrigerator overnight. You can check on it after an hour to stir again and make sure all of the seeds have started expanding. Keep it sealed and in the refrigerator overnight. In the morning, you can add your favorite toppings and enjoy!
